Nana's Granola

I grew up eating this granola, so I'm calling it "Nana's Granola," since that is what my children call my mom. This is a yummy, healthy breakfast that my entire family enjoys. I've taken my mom's recipe, and have added a few things, which I'll explain after the base recipe.

Base recipe:

6 cups Oats (old fashioned)
1 cup coconut flakes
1/2 tsp. salt
1/2 cup oil
1/2 cup honey
1/4 cup water

mix ingredients and put in a 9x13 pan. Bake at 300* for 10 minutes. Take out, stir, then bake for 10 more minutes.

My additions:
I play around with this recipe every time I make it.
Some ideas or additions that I have used:
sesame seeds, pecans, almonds, dried blueberries, cherries, apricots, cranberries, and flax seed.

Substitutes:
Lately, I use the organic extra-virgin coconut oil to replace the canola oil. This is super healthy! For an explanation on why coconut oil is healthy, visit my very knowledgeable sister-in-law, Robyn's website: Green Smoothie Girl.
**The coconut oil adds a yummy taste, however, it might be too sweet for some. So, I have also done 1/4 cup canola and 1/4 cup coconut.

Flaxseed: I add ground flaxseed after I bake the granola. Truth be told, I think my family prefers the flax in the granola. It has a very mild, light flavor and adds a hint of a nutty touch. Obviously this is hard to explain, but I think you'll like it. Especially given the important health factors! The seed is prized for its many vitamins and minerals, as well as omega-3 fatty acids, the essential polyunsaturated fats that may reduce the risk of heart disease. Flaxseed and ground flax are also rich in fiber and lignans, hormones thought to inhibit breast and prostate cancers.
You can buy the seeds whole and grind them yourself with a grinder, or buy them already ground (look for "flax meal" on the label). It is important to eat the seed grounded. I used to use the whole seed, but found out that the meal's nutrients are easier for the body to absorb.
I also use flax meal in many other recipes. I add it to my green smoothies, pancakes, french toast, muffins, turkey meatloaf, etc. You can pretty much sneak it into anything, and your family doesn't even know that they are getting such great nutrition! :)

How can you possibley have such darling shoes for little girls and not have big kid sizes? Buying for little girls is too much fun! And my Ashy would sure love a couple pair of these shoes, or at least I would love some for her! :) I'm so lovin' these shoes for little girls! The boy shoes are cute too, but nothing compares to fashion for a little princess. I'm just sayin'....

A new bakery opened up close to where my daughter takes gymnastics, on 12300 S. 177 W. in Draper, Utah. It is a very lovely store called Beyond Glaze. They make the most incredible and wonderful yummies. I mean, doughnuts are tempting enough, but gourmet doughnuts? Come on! Needless to say, they are a must try! I've never seen doughnuts look so beautiful and inviting! Oh, and here are a few of their flavors: Pineapple Tart, Key Lime Crumble, S'more, Blueberry Bliss, Raspberry Mango, Cookies & Cream, and German Chocolate. I can't decide which is my favorite!

In my opinion, one of the great things about summer is the show So You Think You Can Dance! It is basically the only thing on TV worth watching during the summer, and that is just great, because it is BY FAR my favorite show on TV! Seriously! It is the best show out there! It is entertaining, it is inspiring! The talent is crazy-out-of-this-world! I can dream about being the dancer I never was and always wished I were! It is fabulous!

Marinade for Steak

This is a healthy & yummy recipe that I have always used for Flank Steak (obviously, since that is the name of the recipe). However, recently, I have used it for many different types of steak while grilling outside and have really come to love this versatile, no-fail marinade.
This comes from the Eating for Life recipe book by Bill Phillips. I really like this book for some basic healthy & easy recipes.

Marinated Flank Steak

1/3 cup lite soy sauce
1 Tbsp balsamic vinegar
1 Tbsp olive oil
4 cloves garlic, crushed
1 tsp ground ginger
1/2 tsp ground black pepper
1 flank steak (about 11/2 lbs)

In a large Ziploc bag , combine ingredients. Using a fork, pierce flank steak several times on both sides and place in Ziploc bag with marinade. Seal bag and refrigerate for at least an hour.

Preheat oven to 450 F. Put steak on broiler pan. Broil 3 inches from heat source for about 6 minutes on each side. Bon appetite!

The Middle Place

Just finished this book, The Middle Place. Amazing. I know. Since I'm not the "reader" I once was. It is a charming true story about Kelly and her family and their experience as she struggles through cancer. It is funny, poignant, and insightful. There were many moments when I could not believe she wrote what she did ( if you read it, you'll know what I mean). Then there were other moments, I loved what she wrote and how real she was! Overall, I really enjoyed it! She is a very talented writer! I am in awe and admiration for those that are are blessed with the writing talent + creative talent!
I am also in awe at those who have struggled with cancer themselves or have had close family members who have. What a trial! As I read this book, I thought about one of my life-long- friends, one of my "besties," Kathy. She and her family are currently going through this very trial with her mother, Karen (who was like a bonus mom to me through Junior High and High School). They have truly suffered, but have risen to the occasion, and have shown such faith and courage and strength. I love you Kath and Karen and family! I will continue to hope and pray for you on the brutal road to recovery. You're so loved and so amazing!

Star Valley with the Felts Family

It was so good to be with our long-time-friends: the Felts. We all love Star Valley so it is so fun to go together and let the kiddos have lots-o-fun! They had their fill of raspberry picking, "hunting," making forts, and looking for squirrels. We went up Grays Canyon for a great Rhino and 4-wheeling ride. The guys got to do a bit of fishing on the Grays River and then on the Madison River. We had square ice cream cones on our scenic drive to Island park and then they were able to hang-out with us in Island Park for a bit. Fun times! We can't wait for our next vacation with them. Meggan and I have been friends for over 20 years! We've been through a lot together and have had many fun times together. It is sure nice to have life-long friends! Love you Meg! And love your darling family!

Is it just me, or does motherhood have some major ups and downs?
OK, so maybe it is just life in general. On a daily basis, I find myself on different extremes: "I can totally do this! I love being a mom! My kids are so fantastic!" then the next minute: "how does anyone do this? how am I going to get through today sane? I don't know if I have any ounce of patience in my body!" I find myself getting overwhelmed with just the idea of what I need to accomplish or would like to accomplish....and that is just the idea, not the reality! Oh! How I need a course on time management! I'm desperate for it!
This poster might just help with a settle reminder each day. I'm always a sucker for "historical" things too.

HISTORY OF KEEP CALM AND CARRY ON:

The Keep Calm and Carry On poster has a fascinating British history. In 1939, in anticipation of the Germans attacking England, the British Ministry of Information commissioned Keep Calm and Carry On posters to help the population deal with their fears. Although 2.5 Million Keep Calm and Carry On posters were printed, the Keep Calm and Carry On poster was never actually issued and only a handful of Keep Calm and Carry On posters ever went into circulation.

Things changed in 2000, when British booksellers unearthed an original Keep Calm and Carry On poster in a box of books. The original artist is unknown, but they started reproducing the poster and now the British can’t seem to get enough of the poster print.

These prints can now be found everywhere in Great Britain, from homes to pubs to government offices. It is quickly proving to be popular Stateside with its wisdom for all seasons and situations.

DIY: Framed Wallpaper Picture

We've had this old family photo up for four years. I've never liked the frame around it, and have been especially annoyed by it the last couple of years. Finally, I decided to do something about it! FINALLY! I ordered some wall paper from Walls, bought white spray paint from Home Depot, and purchased a matte to surround the "picture." Here is the result! I am quite pleased and love how refreshing it is to have a "different" frame in that location. This wall paper is fantastic and I'm thinking of using it on the back of my cabinet piece. When I ever get to that project, I'll show pics.
I have framed wall paper in two other places in my home. I'll show those pics later too. I love wallpaper ! After spending hours tearing down my mom's old wallpaper, I never thought I'd say that about wallpaper.....but have you seen how fun, unique, and sophisticated it is lately? Wow! If putting it on a wall sounds a little over-the-top right now, then framing it is a great idea! I think I'm ready to wallpaper a bathroom, entry, or one wall in my bedroom. I have to find just the right print for that.

Zucchini Bread

Like many people, I have had a lot of zucchini growing in my garden lately. Every day last week I grilled a mixture of veggies (asparagus, yellow and red peppers, beans, cherry tomatoes, and zucchini) with garlic, olive oil, salt and pepper. What more can I do with zucchini? Well, bread, of course! I have tried a couple of different recipes and I think I found a winner. Mr. D claims this his favorite. I thought I'd share with you the yummy recipe for Zucchini Bread.
***A couple of changes I did: I added more lemon juice and lemon zest. It calls for 3 cups of sugar but I only did 2 cups. And, It calls for 3 1/4 cup flour and I did 2 1/4 cup white and 1 cup whole wheat. I also did not put in any nuts.
If you try this let me know what you did and what you liked. I always love good ideas.

Oh how I miss going to the mailbox and seeing that my favorite magazine has arrived. I don't get excited about the mail very often, but I sure got excited to receive my Domino magazine. What was it about that magazine that was so wonderful? I think it was the crazy unique and artistic quality......whatever, (sigh) because it is no longer with us. Luckily, I still have the Domino book to pour over. There are so many great decorating ideas in there. There are SO MANY things I would love to try, love to copy, and love to apply to my home decor, maybe someday I'll be able to redecorate.... Oh well. A girl can dream. A girl can plan. And a girl can change her decorating mind as often as she likes, right?

Blonde Brownies

Blonde Brownies

2/3 cup margarine, softened
2 cups brown sugar
2 tsp baking powder
1 tsp vanilla
1 tsp salt
2 large eggs
1 1/2 TBS water
2 3/4 cups flour
2 cups chocolate chips
**** you can play with this: i used 1/3 semi-sweet, 1/3 white chocolate, and 1/3 of the mixed/swirled white and chocolate chips..... next time I think I'll try peanut butter chips mixed with chocolate, or no chips and frost the bars with a yummy chocolate frosting.

Mix first seven ingredients together, then add flour. Blend together. Add chocolate chips and stir. Spread mixture into 9x13 baking pan. Bake at 340 degrees for 22-24 minutes. Bake only until the bars begin to slightly brown on the edges.

July Update

A little family trip to Solitude was great way to escape the heat in the Valley. The kids loved swimming everyday, and we were able to do a little fishing, 4 wheeling, and relaxing.

I-Man and A-Girl had swim lessons for a month and they both really improved and are becoming great little swimmers.

Happy Birthday Mr. D! We love you and appreciate all you do for us!

Happy 4th of July! We had Mr. D's family over for a day of fun, bbq, fireworks, water games and volleyball. It was sure fun to be with family, especially those that live out of state and we don't get to see as often as we'd like.

G-Baby Update

How cute is this bib? It is such a great bib and my sister-in-law, Brooke, made it! Thanks Brooke! I love homemade gifts. I wish that I were more crafty and a better seamstress, but at least I can benefit from the talents of others!
So, G-baby is now 6 months and although he is not completely stable sitting on his own, he is really trying to crawl. He still wakes up about 3 times during the night.....he has never been the best sleeper and I'm really trying to change that! Sleep is too important! G-baby has the best smile that could brighten any day! He loves to cuddle and loves to get a lot of attention! He is so adorable and I'm so glad he has blessed our family.

Sophie the Giraffe is G-Baby's favorite toy. I think it is the best teether that any of my children have had. It is so darling because it looks the same as it did when it was first "born" in France in 1961. Sophie is 100% natural rubber derived from the sap of the Hevea tree and is still "traditionally" produced to this day. It is Phthalates and BPA free and facilitates a babies development.

J-Boy has many favorite toys. He basically likes to haul ALL his cars, trucks, airplanes and trains around to whatever room we are in. He loves to "pack-up" anything that can carry his toys and he is very talented at making messes. Besides the obvious transportation toys, he also loves his Busy Zoo Activity Center that Santa brought him for Christmas. Santa said he got it from Target.

Cherry-Vanilla Buttercream Frosting: The Best Frosting!

Unlike my husband, I love frosting. He eats the cake and I eat the frosting. That makes a good match in my book! :) If you are on my team, then you'll love this AMAZINGLY YUMMY buttercream frosting recipe, because not all frosting's are created equal. No. No. There is decent frosting, and there is AMAZING frosting. This happens to be AMAZING! If you happen to make it, let me know what you think. I use this on cupcakes, particularly chocolate. I have also used this as the frosting for homemade Oreo's, and my kids like it on grahm crackers. Basically wherever you feel a need to frost something. Sometime I'd like to mix it up and try a raspberry preserve, or strawberry, or apricot.....

Cherry-Vanilla Buttercream Frosting:

4 1/2 cups confectioners' sugar
11/2 cups (3 sticks) unsalted butter, softened
1 tablespoon vanilla extract
3 tablespoons heavy cream
2/3 cup tart cherry preserves ( I used the Bonne Maman Preserves)

Beat confectioners' sugar and butter on medium-low speed until well-blended. Add vanilla and heavy cream; beat for 2 minutes, until light and fluffy. Beat in cherry preserves until well-incorporated.

I love citrus fruits! I love lemons!
Lemons remind me of being surrounded by lemon trees in the Algarve (southern area) when I lived in Portugal. It brings back a lot of memories. I have been on such a lemon kick lately! I always have a lemon in my drink, but I've also been making a healthy-fresh lemonade. To sweeten it I've been using Xylitol or the new sweetener Truvia, and a couple of drops of orange flavored Stevia. It has been a refreshing treat!

Summer Lovin'

Part of my Summer Lovin' is hanging out in our hammock with my kiddos. They love to play and tackle each other on it. I, however, love to cuddle, relax and read on it.

One of my favorite things about summertime are the berries! Strawberries, blueberries, raspberries.....all the berries. Yum-O! We have a strawberry patch in the backyard that usually produces a ton of fruit, but this year, due to the cold, we didn't get very much. I still made strawberry-blueberry jam. Ahhhh! Nothing like fresh jam on a yummy slice of sourdough bread. THE BEST! The kids love to go pick the strawberries and eat them silly. Next year, I need to plant more!

I love Mrs. Meyer's cleaning products. Right now everything is 20% off until July 26th.

I have been trying to use chemical-free products for cleaning lately. GO GREEN! Especially since I have been trying to have my kids help clean the house. I just feel a little better if they are using and inhaling a safer product. I love the way they smell! I have found their products at certain Target stores and Harmon's Grocery.

All of their cleaning products are made with natural essential oils, are biodegradable and phosphate-free. Their claim: "our cleaning products are good for your house, your nose, and the environment."

Another non-toxic brand I LOVE to use is Method. The Pink Grapefruit All Surface spray is so great! And I love the Daily Shower spray! I have used other shower sprays and I would have to leave the bathroom after using them because I could not breath! Method's spray smells like a spa so you want to breath it! Ahhhh! I can usually find Method at Target. Gotta love Target!

To mix things up, I decided to try a new cookie recipe and found this one from Paula Deen. Now, instead of candied cherries, I used dried cherries. Some people really liked the entire cookie, however, a few liked the cookie, just not the cherries. So, if your family doesn't like the idea of cherries, maybe try cranberries instead. I personally liked the cherries, but I'll try the cranberries next to see how that turns out. It's a yummy recipe!

The Princess Festival

We've tried to do a camp-out with our friends for quite sometime now, and it finally happened.....except not in the mountains, but our backyard. Although not much of a "camp-out" activity, we got an inflatable slide and jump house. It was a hit with the kids!

Although rain spoiled some of the morning activities, the kids were no about to let it rain-out the party! They would go do their part in the race, freezing all the way, then jump in the hot tub to get warm. It was time to clean the hot tub anyway! :)

A Squirrel in My House!

The other day I opened our sliding door, then shut our screen door to let-in some nice fresh rain air. I was looking forward to a hurry-and-accomplish-as-much-as-you-can day while my two oldest were away at Nana's Camp. I went to the laundry room to switch loads and was headed to the kitchen to do the morning dishes, when to my surprise and horrer, there was a squirrel in my house! He had crawled under the screen door, the gutsy scroungy thing. He was not what you call a cute squirrel, and he is big on the scale of squirrels I've seen. J -Boy was frozen and wide-eyed in the family room, so I calmly said, "honey, go to your room!" He grabbed his blankie and elephant and ran to his room. I tried to look around in the corner where the squirrel ran towards, which is where we keep our blankets and toys. I COULD NOT FIND HIM! I assumed he went through our railing and went downstairs. SNAP! There went my day. Now, I had to deal with an unwelcome animal..... oh! and poor J-Boy. I went into his room a little later, and he was just sitting on the floor, cuddling with his blankie, with a scared look on his face, not making a peep! He was fine after 2 seconds of a comfort-cuddle and ready to help me look.

I called my neighbor to see if her boys wanted to come chase him down. They weren't available, but she suggested animal services. I called animal services, and they couldn't come because he is "wildlife." I called wildlife services and they couldn't come because they "don't do squirrels."
Mr. D was out of town, so I called my brother and Dad, and they, along with my Mom and sister, came and we searched high and low with no success! At some point he snuck back out because we saw him running around our back porch two days later. But until I saw him on the porch, I was all creeped-out thinking he was going to surprise attack us any minute! And don't think I didn't leave little piles of nuts all over the house, just to see if he would come for a nibble. I didn't ever want to leave my two little ones alone, just in case it was some crazy squirrel....you never know!?

Nana's Camp

These 3 cuties had a fun day at Nana's Camp! My mom started a fun tradition this summer for the 3 oldest grandchildren. She has a hand-full of days planned where she will do a craft, read books, and do other activities on a certain topic and then take the kids to do the "big activity." For example, she did a lesson on being a Child of God. Then, they made these cute frames and put a picture of themselves in it. And then she took them downtown to the "Child of God" exhibit in the LDS Church Museum. The kids are crazy excited to go to Nana's camp and spend time together. I know she has a camp planned for the zoo and heritage park, but I can't wait to see what they do next! What a great idea mom!

My children love to play with all the fun toys at Pottery Barn Kids while I shop and look around. We end-up staying there for quite awhile because they are so entertained. Last time we were there, J Boy found a new favorite toy, and he is not easily attached to toys. For some reason, he just really loved these Sprig Vehicles and would NOT let it go! At the time, I didn't understand why he was so attached, but they really are pretty cool vehicles. Bonus, they are eco-friendly too!

Red Rocks Las Vegas

While in Vegas a couple of weeks ago, we took a nice hike one beautiful evening in Red Rocks. The kids always love scrambling up rocks, and incorporating a pretend sword fight or two. J-Boy has no idea how lucky he is to have a "time out" in such a beautiful location. Just remember J-Boy.... it doesn't get better than that for a punishment location! :) I can't wait until J-Boy doesn't want to escape constantly. He is such an explore bug! I-Man and A-Girl rally up any trail or mountain pretty good now. I love hiking with our little family.

So almost every Sunday we go to dinner at my parents and my mom makes a tasty meal. She is an excellent cook and she makes some exceptionally excellent desserts. We just celebrated my sister's birthday and my mom made a White Chocolate cake that was so yummy! She uses this fabulous cookbook called The Cake Mix Doctor by Anne Byrn. May I recommend some of my families favorites? 1. The Perfect Chocolate Cake, 2. My Favorite Birthday Cake (a yellow cake with chocolate frosting), and 3. White on White Cake (white chocolate). These are not just my favorites.....everyone loves these. They are requested all the time. There are many great recipes in this book, and we pretty much enjoy everything she makes. But those are our top three. Bon Appetite!

Princess Festival

My sister-in-law sent me the link to this darling princess festival. A couple from Lindon built a castle for their grandchildren and they use it to hold the Annual Princess Festival, which is a charity event. 100% of the donations received at the Princess Festival will be used to help children and their families in Kenya, Africa. The sponsoring organization, "In Our Own Quiet Way," is a fully-accredited 501(c)(3) charitable organization in Lindon, Utah.

A-Girl is so excited to dress up like a princess and visit the castle and I'm excited to be a part of the charity event. If you have a princess, you should check it out and maybe our darlings can go to the castle together.

Favorite Lipstick

L'Oreal's Infallible never fail lip stain and lip gloss have been some favorites for some time now, but they just added lipstick to the family. The lipstick has now become my favorite. If you put it on correctly ( put the color on, wait until it dries, then put on the gloss) it lasts for a long time! It never fails! Right now it is buy 1 get 1 free at Ulta.

The Secret Garden at the Mirage

So Vegas knows how to make a "zoo" amazing! We took the kiddos to the Secret Garden at the Mirage. It is really neat to see the dolphins up close... I mean you can get right up to the pool and touch them. My kids were playing ball with a dolphin! There was a baby dolphin and a baby leopard, and they were darling. I have never seen white lions, tigers, and leopards so well groomed and fed! These cats are very well taken care of and they are remarkably beautiful. I was very impressed with this place! It is one of the few great things to do with the family in Vegas. We also went to the Red Rocks and did a little hiking. Red Rocks is neat, just because you don't expect a place like that right outside of Vegas. It doesn't really compare to the beauty of southern Utah though. Hopefully I'll be able to download pictures again soon:)

Citrus in the Kitchen

There are many lotions and soaps out there, but in the kitchen, I always go back to Williams-Sonoma Essential Oil Collection. I used to be hooked to the Pink Grapefruit version. But this spring I'm in love with the Meyer Lemon and Persian Lime! Citrus is oh so yummy! And it helps that it is natural and "Earth-friendly."

Stars Wars Obsession

For the past 3 months my children, especially I-Man, have been obsessed with Star Wars. We have watched all 6 movies and the new Clone Wars movie. Mr. D and I-Man love to play the Legos Star Wars Wii together. I-Man basically had a Star Wars birthday and added many figures and light sabers to the collection. Well, we had such a cute moment tonight amid the yucky details of the 3rd movie. Ashy started crying because she was so upset that Anakin is the one that turned into Darth Vader. After the Clone Wars movie and cartoons, you really grow an attachment to Anakin. Much more than the first 3 movies. Ashy is so cute and so loving! I felt terrible that she had to learn that bit of information. At such a young age it is hard to understand the bad in the world. I guess at any age it is hard to understand. I wish that we could shield our children from the bad forever! On a side note...why are there so many weird names and details in Star Wars ? Mr. D and my kids are great at remembering everything. Me, not so good.

"O" at the Bellagio

Finally! Finally! We have had our business in Vegas for almost 3 years, and in all those years I have been wanting to go to a Cirque Du Soleil show. It is hard to get away from the kiddos and we have not had a lot of babysitting options, but this time down, we were able to work something out. Mr. D did surprise me 2 years ago with a night out to see Celine Dion! I was so excited because I really wanted to see her perform before her show ended! She did not disappoint. Her show was amazing! I was also able to see Mama Mia with some of my friends during one of our girl vacations. But, there are so many shows to see here, and I love to go to shows! Broadway shows, musicals, plays... you name it. I miss going to them. So, thanks Mr. D! Thanks for a fun night out! I loved "O". It was eclectic and creative. It was beautiful and shocking. The talent of those performers is quite amazing! There is so much going on every moment that it is hard to take it all in. I think I need to see it again. :) Now, on my list for next time..... So, the other day I'm flippin through the ELIZA magazine and I come across an add for this cute store. I get online to check it out, and what do I find? The most adorable store with the most adorable bedding, aprons, home decor, clothes, etc., etc. I can't wait to check out all of the goodies this store has to offer! You'll love it!
